My kids favorite part of Lucky Charms, the marshmallows of course! When spring rolls around we are always looking for fun recipes to whip up. If you love Lucky Charms, you’ll love these cookies. They are the perfect spring dessert to keep your kids smiling. They are definitely “magically delicious.”
We found this new Lucky Charms Honey clovers and decided to try and make the cookies with it.
Start by separating the marshmallows from the cereal and set both aside.
You will be using both in this recipe.
The kids actually had a ton of fun during this part.
After you gather your ingredients, preheat oven to 350˚F.
Line baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl beat the butter and sugar with electric mixer until fluffy.
Blend the 1/2 cup Lucky Charm cereal in blender until it crumbles.
Take your dry ingredients and add into the large bowl.
Now the eggs, vanilla, and cereal mixture. Mix Well.
Mix in marshmallows until evenly distributed.
Scoop cookies onto baking sheet (2 tablespoons in size) and a few inches apart.
Bake for 8 – 10 minutes, or until the tops have just set but haven’t started to turn brown.
The cookies will look undercooked but they harden after they sit for a few minutes.
Remove from oven and press additional marshmallows into the tops while cookies are still warm.
These are fan favorite right out of the oven. The marshmallows taste amazing when warm.
My kids often heat these up before they eat them.
You can even add them to ice cream or make ice cream sandwiches out of them.
